However, Dad was the master chef on our camping trips,\u00a0and his egg breakfasts are what I remember most.\u00a0<\/em><\/p>\n<p style=\"text-align: center;\">Prep Time : 15-20 minutes: Yield: serves 4 to 6<\/p>\n<table>\n<tbody>\n<tr>\n<td valign=\"top\">\n<h4><em>Easy Camp Skillet Scramble\u00a0<\/em><\/h4>\n<hr \/>\n<p>1\/2 medium onion, chopped<\/p>\n<p>3 celery stalks, chopped<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>6 eggs<\/p>\n<p>1\/4 cup milk (or half and half)<\/p>\n<p>8.5-ounce-can bush beans, drained<\/p>\n<p>1\/2 cup cheddar cheese<\/p>\n<p>Salt and pepper to taste<\/p>\n<h4>Preparation<\/h4>\n<hr \/>\n<p>In oil, cook onion and celery until tender.<\/p>\n<p>Whisk eggs and milk in separate bowl.<\/p>\n<p>Drain beans.<\/p>\n<p>Combine remaining ingredients and stir until ready over<br \/>\nmedium heat.<\/td>\n<td valign=\"top\">He always packed the fragile cargo in our cooler. A wooden food box that he built held our dry goods. I&#8217;ll never forget our faded green pop-up camper with the moldy vinyl tops that sprung out from each side. Once dad set up that beast, he\u2019d build his shrine \u2013 the grill. Every utensil you could imagine dangled from side hooks like prized medals, and one lonely cast iron pan.<\/p>\n<p>Dad was an early riser, and\u00a0by the time we woke up the eggs were already sizzling. We\u00a0were excited to go seek adventure, but also for a campsite\u00a0breakfast outside at the picnic\u00a0table. We were starving by the time he plopped a serving onto our paper plates. Buried\u00a0deep within those eggs rested an endless list of ingredients\u00a0that were never the same, but always delicious. We looked\u00a0forward to breakfast, and I suppose he did too. And of<br \/>\ncourse, Mom was pleased to relinquish her culinary duties\u00a0for a morning.<\/p>\n<p>The protein-packed fluffy scrambles fueled us for hours\u00a0as we set out to become pirates or gypsies. We hiked, built\u00a0forts and conquered Mother Nature.
